Make the nuoc cham sauce, save the excess for another use. Place pork chops in a plastic bag or dish and pour nuac cham sauce, olive oil, garlic, jalapeno pepper and freshly cracked black pepper. Mix with porkchops well. For more flavorful results, marinate for 8 hours to overnight.
Take out the pork chops and drain excess marinade. Pat dry on paper towels to get a good sear. Grill over medium high heat until cooked.
