Homemade Tomato Sauce

    Tomato Sauce Recipe

    Ingredients

    Makes 4 Cups of Sauce

    Olive Oil

    1 Tbl

    Tomato, Fresh

    4 lbs

    Roughly chopped, approximately 6 cups

    Onion

    1

    Diced

    Garlic Cloves

    12

    Minced

    Preparation

    Step 1, Cook:

    Heat oil in a large saucepan or dutch oven over medium high heat. Add onions and cook until soft. Add garlic and cook for 30 seconds. Add tomatoes to the pot and bring to a boil. Lower heat to medium and cover pot.

    Step 2, Food Mill:

    After about 30 minutes, tomatoes should be soft with the skins falling off. Turn off heat and let cool.  Run tomatoes through a food mill.

    Step 3, Finish:

    Add liquid back to the pot and bring to a boil. Turn heat down to medium and cook uncovered until sauce is 4 cups or desired consistency, about 1 hour.

    Canning:

    In sterilized pint jars, add 1/4 tsp of citric acid and fill the rest with tomato sauce.  Process in a water bath for 45 minutes.
