Makes 8 cups of applesauce
Peeled and Cored
Juice from about 1/2 a Lemon

Add all ingredients to a large pot and bring to a boil over medium heat. Reduce the heat to med-low and cover. Cook covered until apples lose their shape and can be mashed to the right consistency. Remove the cinnamon stick if using.
Rim sterilized jars with distilled vinegar. Pour the applesauce into eight (8) half-pint jars or four (4) pint jars. Close the jars with sterilized lids and process in a water bath for 20 minutes for half-pint or 30 minutes for pint jars.
You can add in all kinds of different spices and ingredients to zap up this applesauce like cinnamon, nutmeg, allspice, vanilla, and brown sugar. When I can applesauce to be used as an ingredient in a different recipe, I normally keep the applesauce very simple. You can always add in spice later. A great way to use applesauce is in baking. It can act as a substitute for eggs.
