Add 1 tablespoon olive oil to a medium size sauce pan over medium heat. When the oil is how, add the garlic and red pepper flakes and cook for 30 seconds. Add the tomato sauce, oregano and basil. Cook until the sauce has thickened about 25 to 30 minutes. If the sauce is too acidic, add sugar.
Preheat the oven to 400F degrees. After cooking the 3-part breaded fried chicken, place the fried chicken cutlets in a rimmed baking pan. Top the cutlets with the mozzarella and Parmesan cheeses. Place in the preheated oven for 10 minutes or until cheese is melted and the top has golden brown spots.
While the chicken is in the oven, cook the pasta noodles according to package instructions. Once Cooked, toss the pasta in with the sauce.
To assemble one serving of chicken parmesan, put down 1/8 of the pasta noodles, then top with the half of a chicken cutlet. Sprinkle with chopped parsley and if desired, additional grated Parmesan cheese.
