Pasta e Fagioli

    PASTA E FAGIOLI Recipe

    Ingredients

    Makes 6 Servings

    Olive Oil

    1 Tbl

    Onion

    1

    Diced

    Carrot

    1

    Peeled and Diced

    Celery Stalk

    1

    Diced

    Garlic Cloves

    12

    Minced

    Oregano, Fresh

    2 Sprigs

    Remove stems

    Cabbage

    1/4 Head

    Chopped

    Beans, Dry, Cannellini

    1/2 Cup

    Cooked in an instant pot

    Parmesan Rind

    2

    Chicken Stock, Homemade

    4 Cups

    1 lb

    Diced

    Dry Pasta

    1/2 Cup

    Something suitable for soup like small elbows or shells

    Black Pepper

    To Taste

    Optional Toppings

    Parmesan cheese and parsley

    Preparation

    Step 1, Aromatics:

    Heat the oil in a large stock pot on medium high heat. Saute the onion, carrot and celery. When onions are translucent, add the garlic, oregano, and cabbage.  

    Step 2, Cook:

    When garlic is aromatic, add the parmesan rind, stock, tomatoes and beans. Bring to a boil, and then reduce heat to a simmer. After 30 minutes, add the pasta and season with pepper to taste. Serve when pasta is cooked.  Optional garnish of parmesan cheese and parsley.
