One of the best parts about this salad are the croutons soaked in balsamic dressing. If you're not eating the salad right away, include the croutons right before adding the dressing and enjoy the crunch!
Combine the tomatoes, cucumbers, bell peppers, red onions, parsley and croutons in a mixing bowl. Drizzle the balsamic vinaigrette over the salad and mix. Sprinkle the Parmesan cheese over top.
You can add kalamata olives but 1/4 cup will add 74 mg of sodium to one serving. Adding burrata cheese adds 73 mg per serving
