We love to grill extra zucchini or other summer squash. Any leftovers are thrown into salads, soups or pastas the next day.
Preheat grill to medium-high heat. Drizzle oil and sprinkle the rub all over the zucchini. Toss until fully coated.
Grill for 4 minutes on each side or until zucchini is soft. Serve.
Add garlic yogurt sauce or a drizzle of hot honey for a quick way to add that something extra to the dish!
