We discovered fried cauliflower as an appetizer at Border Grill in Las Vegas. So delicious as a bar bite. Great to serve with a spicy dipping sauce.
Heat the oil in a small saucepan on medium high heat. Mix the flour, cornstarch, baking powder, and everything rub in a small bowl. Add the milk and mix until combined to a batter.
Dip the cauliflower florets into the batter and drop into the oil. They will sink to the bottom of the pan. Wait a couple minutes for the batter to firm up, then dislodge the cauliflower from the bottom of the pot using a spoon. Continue frying until golden brown. Fry in a couple batches so each floret has enough room in the saucepan. Serve.
The taste and texture of the cauliflower mimics fried whitefish. We use these for "fish" tacos and "fish" and chips.
