The key here is to flavor each chop with the everything rub and then coat with the breading. Low and slow is the mantra here and this method will reward you with juicy pork chops. Both sides should be a nice golden brown.
Preheat the oven to 325F degrees. Spray a 13" X 9" sheet pan with olive oil. Mix the Italian seasoning, onion powder, garlic powder, Parmesan cheese and both bread crumbs in a bowl. Set up 3 plates for breading the pork chops - flour, beaten egg, and breadcrumb mixture.
Sprinkle each pork chop on both sides with the dry rub. Then dip each pork chop first in flour, then dip in the beaten egg and finally coat both sides in the breadcrumb mixture. Place each chop on the prepared sheet pan and bake in the oven for 30 minutes. Turn pork chops over carefully and bake another 30 minutes.
