We have an apple tree that produces a lot of apples. We've discovered that applesauce can serve as a substitute for eggs. One of our favorite recipes using applesauce is chocolate chip cookies.

Ingredients

  • 6 lbs Apples, Peeled, cored and sliced
  • 1 Cup Water
  • 2 Tbl Lemon Juice - Juice from about 1/2 lemon
  • 1 Cinnamon Stick (optional)

Preparation

Step 1:

Add all ingredients to a large pot and bring to a boil over medium heat. Reduce the heat to medium-low and cover. Cook covered until apples lose their shape and can be mashed to the right consistency.  Remove the cinnamon stick if using.

Variations

You can add all kinds of different spices and ingredients to zap up this applesauce like cinnamon, nutmeg, allspice, vanilla, and brown sugar.  When I use home-canned applesauce as an ingredient in a recipe, I normally keep the applesauce very simple.  You can always add spices later.

Additional Notes

Water Canning - Rim sterilized jars with distilled vinegar. Pour the applesauce into eight (8) half-pint jars or four (4) pint jars. Close the jars with sterilized lids and process in a water bath for 20 minutes for half-pint or 30 minutes for pint jars.
