Warm Spinach Salad

This is a great salad when you want something that's a little different from a mixed green salad. Also works as a main dish salad.

Ingredients

  • 2 Slices Uncured Bacon
  • 1 Red Onion - Chopped
  • 2 Tbl Red Wine Vinegar
  • 2 Tsp White Granulated Sugar
  • 1 lb Spinach - Washed
  • 1 Egg - Hard boiled, chopped
  • 1 Tbl Feta Cheese - Crumbled
  • 1/2 Cup Cherry Tomatoes - Halved

Preparation

Step 1:

Cook bacon until crisp and crumble into small pieces. Set aside. Reserve 1 teaspoon bacon fat in the pan. Saute red onion in the skillet.

Step 2:

In a small bowl, mix the red wine vinegar and sugar together until the sugar is dissolved. Taste and adjust sugar if necessary.

Step 3:

Mix spinach, crumbled bacon bits, egg, cherry tomatoes and red onion in a large bowl. Add red wine vinegar dressing and feta cheese to the bowl and toss until thoroughly mixed.

Variations
