Warm Spinach Salad

This is a great salad when you want something that's a little different from a mixed green salad. Also works as a main dish salad.

Ingredients

  • 2 Bacon, uncured - 2 slices
  • 1 Red Onion - Chopped
  • 1 lb Spinach - Washed
  • 1 Egg - Hard boiled, chopped
  • 1 Tbl Feta Cheese - Crumbled
  • 1/2 Cup Tomato, Cherry - Halved
  • 2 Tbl Red Wine Vinegar
  • 2 Tsp Sugar, White Granulated

Preparation

Step 1:

Cook bacon until crisp and crumble into small pieces. reserve 1 teaspoon bacon in the pan. Saute red onion in the skillet.

Step 2:

Mix red wine vinegar and sugar together until the sugar is dissolved. Taste and adjust sugar if necessary.

Step 3:

Mix spinach, bacon, egg, cherry tomatoes and red onion in a large bowl. add dressing and feta cheese to the bowl and toss until thoroughly mixed.
