Vietnamese Carrot Slaw

This easy to make slaw adds the right amount of sweet and acid flavors to a Vietnamese dinner. Try it with Vietnamese pork chops or a vermicelli salad.

Ingredients

  • 1/4 Cup Rice Wine Vinegar
  • 1/4 Cup White Granulated Sugar
  • 1/4 Cup Water
  • 1/4 Cup Carrots - Julienned
  • 1/4 Cup Daikon - Julienned

Preparation

Step 1:

To make the pickling liquid, add rice wine vinegar, sugar and water to a sauce pan on high heat.  Stir until dissolved and remove from heat.

Step 2:

Add the vegetables and pickling liquid into a clean pint jar. Store in the refrigerator.
