A nice companion side dish for Korean night.

Ingredients

  • 6 Tbl Less Sodium Coconut Aminos
  • 1 Tbl Maple Syrup
  • 4 Tbl Toasted Sesame Oil
  • 4 Tsp Garlic Cloves - Minced
  • 8 Oz Potato Starch Noodles
  • 1 Tbl Canola Oil
  • 1 Onion - Thinly sliced
  • 4 Mushrooms - Stemmed and sliced
  • 1 Carrot - Peeled and cut into matchsticks
  • 1 Bell Pepper - Red or orange, cut into slivers
  • 1 Egg
  • 6 Oz Spinach

Preparation

Step 1:

Whisk coconut aminos, maple syrup, sesame oil and garlic in a bowl.

Step 2:

Bring a large pot of water to a boil. Cook potato starch noodles, stirring occasionally until cooked through but firm to bite, 6 to 7 minutes. Rinse noodles under cold water and drain. Transfer noodles to a bowl, add 4 tablespoons sauce and toss to coat.

Step 3:

Stir fry the onion, mushrooms, carrots and bell peppers using 3 teaspoons of oil. Add the egg.

Step 4:

Add the spinach and cook until wilted. Add the noodles and sauce and cook until heated through.
