Ingredients

  • 1 Cup Brown Sugar - Packed
  • 2 Tbl Honey
  • 2 Tbl No Salt Peanut Butter
  • 1/2 Cup Coconut Oil
  • 1/2 Tsp Vanilla Extract
  • 2 Eggs
  • 1 Cup All Purpose Flour
  • 1 Tsp Ground Cinnamon
  • 1/2 Tsp Baking Powder, Hain Brand
  • 3 Cup Rolled Oats
  • 1 Cup Raw Walnuts - Chopped
  • 1 Cup Semi-Sweet Chocolate Chips

Preparation

Step 1:

Preheat oven to 350F degrees. Line a 13x9 inch pan with parchment paper.

Step 2:

In a large bowl, beat the sugar, honey, peanut butter, coconut oil, vanilla extract and eggs with a hand mixer until thoroughly mixed.  Add in the flour, cinnamon, and baking powder and continue at low speed until well mixed.  With a spoon, mix-in the oats, nuts, and chocolate chips until well incorporated.  Pour into the pan evenly and press the mixture down firmly so it is packed against the bottom of the pan.

Step 3:

Bake for 25 minutes, turn off the oven and let sit in the oven for another 10 minutes.  Remove from the oven and let cool completely. Then cut into bars.

Variations

Additional Notes

Keeping the bars in the oven allows them to dry out, firm up, and resist spoilage. The bars should not spoil on the countertop for a couple weeks if stored in an airtight container.
