Granola with milk is the only breakfast AJ's father will eat in the morning. AJ and Ronni use the granola for a little bit of crunch in their morning yogurt bowls.
Preheat oven to 250F degrees. Place parchment paper on top of 2 sheet pans.
In a large bowl, combine oats, nuts, brown sugar and coconut. In a small bowl, mix together the maple syrup and oil. Slowly pour in, while mixing, the wet mixture into the large bowl.
Pour the mixture onto 2 sheet pans and cook for 1 hour and 15 minutes. Rotating and switching pans on the rack halfway through.
Turn off the heat to the oven and leave the granola in the oven for an additional 10 minutes to crisp up. Remove from the oven and let cool. Store in an airtight container.
You can reduce the sugar by using 3 TBL of both brown sugar and maple syrup.
