Deli Asian Noodle Salad

We've found this salad to be popular with our friends. This is a perfect dish to bring to a barbecue since it's served cold.

Ingredients

  • 1 lb Spaghetti
  • 2 Tsp Fresh Ginger - Finely grated
  • 4 Garlic Cloves - Minced
  • 6 Tbl Sesame Oil, Toasted
  • 4 Tbl Less Sodium Coconut Aminos
  • 4 Tbl Balsamic Vinegar
  • 2 Tbl Maple Syrup
  • 2 Tbl Sambal Oelek
  • Black Pepper - To Taste
  • 1 Cup Scallions - Chopped
  • 2 Tbl White Sesame Seeds
  • 1 Red Bell Pepper - Thinly Sliced
  • 1 Carrot - Julienned

Preparation

Step 1:

Cook the spaghetti. Once the spaghetti is cooked, run cold water through it to stop it cooking.

Step 2:

To make the sauce, combine ginger, garlic, sesame oil, coconut aminos, balsamic vinegar, maple syrup, sambal oelek and pepper in a small bowl. In a large bowl, mix the cooked spaghetti noodles with scallions, sesame seeds, bell pepper and carrot. Toss with the sauce. Wait 10 minutes for the spaghetti to absorb more sauce and toss again. Serve.
