Ina small saucepan, heat the olive oil over medium high and saute the onion until soft. Add the garlic, then add the rice 30 seconds later and stir. Add the chicken broth while stirring to prevent sticking to the pot.
Bring to a boil and cover and lower heat to low and cook for 23 minutes. Once done, stir in the lime juice and cilantro. Serve.
