This pine nut chocolate cake is one that is not super sweet and is extremely light.
Preheat the oven to 350F degrees. Spray a 9 inch pan with 1 Tbl of olive oil.
Add the pine nuts to a food processor. Process until a nut butter. Add the corn flour and process for another minute. Next, create a double boiler setup by putting a medium pot of water on high heat. Put a metal bowl over the pot and add the chocolate chips. Stir the chocolate chips until they melt completely.
Mix the melted chocolate, the pine nut mixture, sugar, 1/4 cup of olive oil, vanilla, and milk in a large bowl until well-mixed. Add the baking powder, baking soda, and all purpose flour and mix until just combined without dry clumps. Pour the mixture into the prepared baking pan.
Bake for 48-50 minutes or until a toothpick runs clean. Cool Completely. Optional: add a powdered sugar top by scooping 1 tbl of powdered sugar into a strainer and tap the strainer over the cake. Serve.
If you want a sweeter cake, add 1/2 cup of sugar rather than 1/3 cup.
