Aji Amarillo Cilantro Sauce

You can use chimichurri as a substitute for this sauce. This sauce has a little extra kick of spiciness over a chimichurri.

Ingredients

  • 1 Cup Cilantro - Leaves and tender stems
  • 1 Oz Feta Cheese - Crumbled
  • 1 Garlic Clove - Chopped
  • 2 Tsp Oregano, Fresh - Chopped
  • 1/2 Tsp Mustard, Dijon
  • 3 Tbl Aji Amarillo Paste, Homemade - Or other chili paste
  • 1/2 Tsp Honey
  • 1/2 Tsp Cumin, Ground
  • 1/2 Cup Extra Virgin Olive Oil

Preparation

Step 1:

Mix all ingredients (cilantro, jalapenos, feta, garlic, oregano, mustard, aji amarillo paste, honey, and cumin) in blender or food processer until smooth. With the motor running, slowly add oil until mixture is emulsified. Taste amd adjust seasonings with lime juice or jalapenos for heat.
